Florida-Style Grouper Sandwich with Tangy Vinegar Coleslaw

Grilled Grouper Sandwich


Ingredients:

For the Grouper Sandwich:

  • 4 fresh grouper fillets (about 6 ounces each)

  • 4 soft burger buns or ciabatta rolls

  • 1 tbsp olive oil

  • Salt and pepper to taste

  • 1 lemon, sliced

  • Lettuce leaves (optional)

For the Vinegar-Based Coleslaw:

  • 4 cups thinly sliced green cabbage

  • 1 cup thinly sliced red cabbage

  • 1 cup shredded carrots

  • 1/2 cup white vinegar

  • 1/4 cup granulated sugar

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp celery seeds

Instructions:

  1. Vinegar Coleslaw Preparation:

    1. In a large mixing bowl, combine green cabbage, red cabbage, and shredded carrots.

    2. In a separate smaller bowl, whisk together the white vinegar, granulated sugar, salt, pepper, and celery seeds until sugar is fully dissolved.

    3. Pour the vinegar mixture over the cabbage mix and toss well to coat evenly. Refrigerate for at least 1 hour to let the flavors meld.


  1. Grouper Sandwich Preparation:

    1. Heat a grill or stovetop grilling pan over medium-high heat.

    2. Brush both sides of the grouper fillets with olive oil and season with salt and pepper.

    3. Place the fillets on the grill/pan and cook for 4-5 minutes on each side or until the fish flakes easily with a fork.

    4. Remove from heat and squeeze a slice of lemon over each fillet.


  1. Sandwich Assembly:

    1. Slice open the burger buns or ciabatta rolls.

    2. If desired, add a lettuce leaf on the base of each bun.

    3. Place a grouper fillet on top, and generously spoon the vinegar coleslaw over the fish.

    4. Cap off with the other half of the bun.
