Simple Date Night Shrimp Scampi

Shrimp scampi over linguine


Ingredients:

  • 8 oz linguine or spaghetti

  • 1 lb large shrimp, peeled and deveined

  • 4 tbsp unsalted butter

  • 4 tbsp olive oil, divided

  • 6 garlic cloves, minced

  • 1/4 tsp red pepper flakes (optional for a little heat)

  • 1/4 cup white wine (or chicken broth)

  • Juice of 1 lemon

  • Zest of 1 lemon

  • 1/4 cup fresh parsley, chopped

  • Salt and pepper, to taste

  • Grated Parmesan cheese (optional for serving)

Instructions:

  1. Prepare the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.

  2. Cook the Shrimp: While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add shrimp to the skillet in a single layer, seasoning with salt and pepper. Cook until the shrimp turn pink on the bottom side, about 2 minutes. Flip the shrimp over and cook until they are pink on both sides, about 1-2 minutes more. Transfer shrimp to a plate and set aside.

  3. Garlic and Red Pepper Flakes: In the same skillet, add the butter and remaining 2 tablespoons of olive oil. Once the butter has melted, add the minced garlic and red pepper flakes. Sauté until the garlic is aromatic but not browned, about 1 minute.

  4. Add Wine and Lemon: Pour in the white wine (or chicken broth) and bring to a simmer. Let the wine reduce by half, about 2-3 minutes. Stir in the lemon juice and zest.

  5. Combine Shrimp and Pasta: Return the cooked shrimp back to the skillet. Then, add the cooked pasta and parsley, tossing to combine. If the mixture seems too dry, you can add a splash of reserved pasta water or a bit more olive oil.

  6. Serve: Transfer the shrimp scampi to plates or a serving dish. If desired, sprinkle with grated Parmesan cheese. Serve immediately and enjoy your romantic dinner!

Notes:

  • If you prefer a spicier kick, feel free to increase the amount of red pepper flakes.

  • Pair with a glass of white wine and a side salad for a complete date night meal.
