  • 1 tsp dried oregano

  • 1/2 tsp salt

  • 1/4 tsp black pepper

Additional:

  • Italian-style rolls, for serving

  • Provolone Cheese

  • Pepperoncini peppers served like a side pickl


Instructions:

Making the Giardiniera:

  2. Season & Marinate: In a separate bowl, whisk together vinegar, olive oil, oregano, salt, and black pepper. Pour this marinade over the veggies, ensuring they're submerged. Cover and refrigerate for at least 6 hours, preferably overnight.

Preparing the Italian Beef:

  1. Preheat Oven: Preheat your oven to 325°F (163°C).

  2. Season the Beef: Rub the beef roast with salt, black pepper, basil, oregano, minced garlic, and onion powder, ensuring an even coat.
