Chicken Parmesan Sub Recipe

  1. 2 boneless, skinless chicken breasts (about 1 lb.)

  2. Salt & pepper, to taste

  3. 1 cup all-purpose flour, for dredging

  4. 2 large eggs, beaten

  5. 1.5 cups Italian breadcrumbs

  6. 1 cup grated Parmesan cheese

  7. 1/2 cup vegetable oil, for frying

  8. 2 cups marinara sauce (store-bought or homemade)

  9. 8 oz. fresh mozzarella cheese, thinly sliced

  10. 1/4 cup fresh basil leaves (optional)

  11. 2 submarine rolls, halved and toasted

  12. 2 tablespoons unsalted butter (for toasting rolls)

  1. Prep the Chicken: Start by placing the chicken breasts between two sheets of plastic wrap. Using a meat mallet, gently pound them to an even thickness. Season both sides with salt and pepper.

  2. Dredging Station: On three separate shallow plates, place flour, beaten eggs, and a mixture of Italian breadcrumbs mixed with grated Parmesan cheese.

  3. Dredge the Chicken: Dredge each chicken breast in flour, tapping off excess. Dip in the beaten eggs, ensuring it’s fully coated. Finally, coat with breadcrumb mixture, pressing down to ensure the breadcrumbs stick well.

  4. Fry the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the chicken breasts and fry until they're golden brown and cooked through (about 4-5 minutes per side). Transfer to a paper towel-lined plate to drain any excess oil.

  5. Assemble the Sub: Preheat your oven's broiler. Open the submarine rolls and spread a generous amount of marinara sauce on each half. Place a fried chicken breast on the bottom half, followed by slices of mozzarella cheese. Place under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.

  6. Final Touches: Garnish with fresh basil leaves if desired. Close the sub with the top half of the roll. Repeat with the second sandwich.

  7. Serve & Enjoy: Slice the Chicken Parmesan Sub in half and serve hot. Enjoy the melty, crispy, and flavorful taste of this classic Italian deli favorite!

There you have it - a Chicken Parmesan Sub that transports you straight to a classic Italian deli! Stay tuned for more delicious sandwich recipes coming your way.

Note: Enhance your sandwich experience by pairing it with a side of garlic fries or a fresh salad. Buon appetito!
